Embra, the second Holyrood has arrived! Unfortunately, this time the allocation is extremely limited as well.

Holyrood Distillery seems to work magic with various malts and yeasts, quite impressive if we’re honest. The mashbill consists of heavily peated malt, distilling malt, and a pinch of chocolate malt. They also utilize a combination of different yeasts, and if you look closely at the schedule in the sell sheet, you might even spot a glimpse of Belgian Ale yeast. The aging process involves First Fill Bourbon, Peated Islay Quarters, and a segment of brand-new American oak.

The mindset behind Embra was to pave the way for the discovery of peated whisky. Edinburgh serves as the gateway to Scotland for many, and that is the concept underlying this whisky. Holyrood aims to find the perfect balance between the bold smoky flavors and textures of peated whisky while still being accessible to a new whisky drinker. If someone says they don’t like peated whisky, this is the whisky to give them. That doesn’t mean there’s nothing here for seasoned peated drinkers, as it possesses all the hallmark flavors and textures of a great whisky.

Tasting Profile

  • Nose: Lemon zest, chestnut, hints of peppermint, and light hickory smoke.
  • Palate: Cookies, dark chocolate mousse, notes of earthy Highland peat smoke.
  • Finish: Lightly stewed pears, with a well-rounded, clean finish.
