Teeling 21yo Rising Reserve n°3 series

The Teeling Rising Series is a testament to Teeling’s bold vision for Irish whiskey, designed to elevate both the brand and the category with innovative, limited-edition expressions. Each release in the Rising Series features a carefully selected 21-year-old Single Malt that undergoes a dual maturation process, drawing out exceptional depth and character from unique cask finishes. This series honors the legacy of Teeling’s Revival and Renaissance ranges while pushing the boundaries with intricate flavors and cask experimentation.

  • Rising Reserve No.1: The debut expression, a 21-year-old single malt, was initially aged in bourbon casks before being finished in Carcavelos casks, a rare Portuguese fortified wine. This unique finish infuses the whiskey with vibrant citrus and orchard fruit notes, complemented by hints of caramel and oak, bottled at 46% ABV without chill filtration.
  • Rising Reserve No.2: Continuing the series, this 21-year-old single malt was aged in ex-bourbon casks and then finished for three years in Marsala casks from Sicily. This maturation imparts dark fruit richness, balancing sweetness with a layered complexity that whiskey enthusiasts appreciate.?
  • Rising Reserve No.3: The latest addition to the series is also a 21-year-old single malt, aged for 18 years in bourbon barrels, then finished for three years in ruby Port casks. This expression offers a luxurious, long finish with notes of red fruits, chocolate, and warm spices, marking it as one of Teeling’s most profound releases?.

With its combination of tradition, innovation, and premium quality, the Rising Series sets a new standard for Irish whiskey. These limited releases not only showcase the evolution of Teeling but also invite collectors and connoisseurs to experience the rich tapestry of flavors achieved through dedicated cask finishes.

Old grains and peat in Irish malt

Waterford Feuille Morte 3

Waterford is bringing out a new Micro Cuvée, a malt based on an old forgotten Irish grain and their first peated malts.

The Waterford cuvées are assembled from different ‘Original Farm Origins’. They show us how an blend of different terroirs creates layers and complexity in the whisky even if it is still fairly young. Micro Cuvée Feuille Morte has not been released in Belgium, but we managed to get our hands on some bottles straight from the distillery.

The Heritage series explores the aroma’s and flavours of old, forgotten grains. In this case they had to reintroduce Hunter barley, named after plant breeder Herbert Hunter who introduced it in 1959. It disappeared in the 1970’s superceded by more economically rewarding crosses, all that remained of Hunter was a 50 gram bag in the seed bank of the Irish Department of Agriculture, Food & the Marine.

And last but not least we have two new Arcadian Series members Ballybannon 1.1 and Fenniscourt 1.1. Ballybannon is peated up to 47ppm, while Fenniscourt is up to 38ppm. The peat levels were chosen specifically for each farm to make sure the character of the terroir is not lost behind to much peat.
