Kilchoman Fino Sherry Cask

After the success of the previous 2020 edition of Fino Sherry Matured – Kilchoman’s first global release of that cask type – the journey continues over the years with Fino. The 2023 limited edition Fino Sherry Cask Matured, closely monitored by Anthony, now marks the second Fino release. Anthony has hand-selected a total of 20 Fino Sherry Butts, the spirit of which was distilled in 2018. Fino provides the spirit with an entirely alternative maturation style, one that is not often seen at the distillery where more emphasis is typically placed on Oloroso sherry casks, mainly used for their Sanaig and Loch Gorm expressions. As always, the sherry casks were acquired from Bodega Jose y Miguel Martin (Spain) for their impeccable quality. Each cask chosen for Fino Cask Matured has been selected for its quality and individuality. The blending of 20 of these casks after a minimum of five years of maturation has developed a dry salinity that harmonizes with a green fresh fruit influence and prolonged delicate Islay peat smoke.

Tasting notes

Nose: Elegant, dry peat smoke greets at first encounter, gradually transitioning into Kilchoman’s unmistakable fruity character. The distinct influence of the Fino Sherry casks imparts dry, smoked oak that balances with the heavily peated Kilchoman malt’s smoke. A lingering aroma of sweet butterscotch emerges as the whisky opens up.

Palate: Honeycomb sweetness is immediately found on the palate, gradually giving way to rich toffee and caramel. The Kilchoman spirit brings together candied fruit and the fresh citrus notes of distillation. Almond flakes and delicate peat smoke persist on the palate.

Finish: A prolonged finish in which Kilchoman’s malty spirit combines with the matured citrus profile of the Fino sherry casks. Subtle peat smoke that blankets the palate shares the finish with hints of dark chocolate.
