Brought to life by the small hilltop town that once stood above Clanyard Bay in the deep South West of Scotland.
Caol Ila is a brilliant example of great Islay single malt. A still house with an incredible view over the Sound of Islay which of course is where Caol Ila takes its name.
Our casks are characterised by the elegant, burnt lemon and clean smoky qualities of Caol Ila.
It’s these qualities we seek when selecting our casks from Caol Ila.
These casks are refill hogsheads; allowing the distillery style to shine…building up subtle complexities, and presented at cask strength creating a brilliant representation of the Caol Ila distillery.
Nose
Clean and elegant on the nose with a nice smoky component followed by preserved lemon, toasted oak and freshly cut grassy. With water added, it becomes softer fresh coastal notes and lemon peel.
Palate
Honeyed sweetness develops into sweet lemon drops. With a splash of water, a faint grassy note comes to the fore. malty and ashy tones, leaving an elegant, fresh impression.
Finish
A medium-long finish. Flavours drift into smoked meats delivering a well-balanced elegance with a charred lemon peel and sweet oaty finish.
