Maturation Process:
- First Stage: Initially matured in ex-Bourbon barrels from Brown Forman (Kentucky), crafted from heavily charred American Oak (Quercus Alba).
- Mash Bill: A unique blend of malted barley, unmalted barley, oats, and rye—all locally grown in Ireland.
- Finishing Stage: Aged in vintage Madeira casks from the renowned Justino’s winery, including:
- Tinta Negro (1998 & 2000)
- Boal (1999)
- Sercial (1999, 2000 & 2006)
These 350L Cognac casks, made from French Oak (Quercus Robur), previously held Madeira wines aged through the canteiro process, which mimics the historical maritime aging on Portuguese galleons.
